Jalapeno Cheddar Tuna Melt

Ingredients

TUNA SALAD:

  • 2 6 oz cans of tuna
  • 3 tbsp avocado oil mayo
  • 2 tbsp celery minced
  • 1 1/2 tbsp red onion minced
  • 1 tbsp jalapeno minced (optional)
  • 1 tsp dijon mustard
  • 1 tsp sweet relish
  • salt & pepper

TUNA MELT:

  • 2 slices sourdough bread lightly toasted (4 if you don’t want it open faced)
  • 1 tomato cut into slices
  • 2 slices cheddar cheese
  • jalapeño slices optional
  • everything but the bagel seasoning

Instructions

  1. Combine all ingredients for the tuna salad in a medium bowl. Add half of the mixture to each piece of bread.

  2. Top with tomatoes, jalapeños and cheese.

  3. Broil for 3-5 minutes or until cheese is melted. Top with fresh dill and everything but the bagel seasoning!
