Pumpkin Pie Protein Bars

Servings 6 bars


  • 1 cup peanut butter
  • 1/2 cup + 1 tbsp coconut or almond flour
  • 1/4 cup honey
  • 1/4 cup pumpkin purée
  • 1 tsp pumpkin pie spice cinnamon works too
  • White chocolate chips optional


  1. In a large bowl combine all ingredients except chocolate chips with a rubber spatula, spoon or your hands.
  2. Press the dough into a 9x9 square pan and top with chocolate chips. You can also form these into protein balls too!
  3. Refrigerate for at least an hour before cutting. Makes about 6 bars and they are good in the fridge for up to 2 weeks!
