Marcona Almond Romesco Sauce

Servings 2 cups


  • 1 cup almonds I used marcona almonds
  • 1 12 oz jar roasted red peppers drained
  • 3 roma tomatoes cut into fourths
  • 1/4 cup Extra Virgin Olive Oil plus more for roasting the tomatoes and to serve
  • 1/3 cup flat leaf parsley
  • 2 cloves garlic
  • 1 lemon juiced
  • 1 tbsp red wine vinegar
  • Kosher Salt
  • Fresh veggies to serve


  1. Preheat your oven on the highest broil setting. Place your tomatoes on a baking sheet and drizzle with EVOO and salt. Broil for about 5 minutes then let cool. Remove the skins of the tomatoes.
  2. Blend all ingredients in a blender or food processor until the sauce reaches your desired consistency. Add more salt to taste.
  3. Serve with your fresh veggies, crackers, bread, whatever else you can think of!
