Chopped Salad Pizza

Ingredients

Pizza

  • 2 flatbreads
  • 1/2 cup pizza sauce
  • 1 cup mozzarella cheese

Chopped Salad

  • 1 cup romaine lettuce chopped
  • 1 cup iceberg lettuce chopped
  • 1/3 cup garbanzo beans
  • 1/4 cup cucumbers chopped
  • 1/4 cup tomatoes chopped
  • 1/4 cup low moisture mozzarella chopped
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup salami chopped
  • Squeeze of lemon

Dressing

  • 1/4 cup olive oil
  • 3 tbsp red wine vinegar
  • 1/2 tsp Dijon mustard
  • 1 clove garlic minced or crushed
  • Pinch of dried oregano salt & pepper

Instructions

  1. Top flatbreads with sauce and cheese and broil for 3-5 minutes until cheese is melted.
  2. Toss the salad ingredients together with the dressing.
  3. Serve on top of the pizza and top with grated parm!
