Zucchini Cauliflower Fritters

Servings 4 servings


  • 2 medium-sized zucchinis
  • 1/2 cup cauliflower rice
  • 2 eggs
  • 3/4 cup almond flour
  • 3 tbsp grated Parmesan cheese
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • avocado oil
  • ranch dressing to dip!


  1. Grate your zucchinis and squeeze out excess water. You can use a nut milk bag OR place in a bowl and squeeze the excess water out with a paper towel until the zucchini is dry.

  2. Put the dry grated zucchini in a large bowl and add eggs, cauliflower rice, almond flour, Parmesan cheese, baking powder, salt & pepper and garlic powder. Mix em’ all together!

  3. Make little patties and cook on medium to high heat with some avocado oil for 4-5 minutes each side or until crispy.

  4. Serve with ranch dressing!
