The Belcampo Burger Recreated

Servings 2 burgers

  • 1 lb @belcampomeatco grass-fed & finished ground beef
  • Kosher salt
  • Black pepper
  • 2 brioche buns I get mine from Trader Joe’s
  • 1/2 tbsp butter
  • 1/2 yellow onion sliced
  • 1-2 tbsp olive oil
  • 2 slices white cheddar
  • 2-4 butter lettuce leaves

Special sauce:

  • 1/3 cup mayo
  • 2 tbsp ketchup
  • 1 tbsp relish
  • 1 tsp apple cider vinegar
  • Pinch of salt

  1. First, make the caramelized onions. Heat a pan over medium-low heat and add olive oil and sliced onions. Season with salt and pepper. Stir occasionally until onions become soft and a caramel color, about 45 minutes.
  2. Let your beef come to room temperature for about 15 minutes.
  3. Form the beef into 2 patties and use your thumb to press in the middle a bit.
  4. Heat a skillet or grill over medium-high heat.
  5. Season each patty generously with kosher salt and pepper.
  6. Once the skillet or grill is hot, add your burgers. Mine took about 2-3 minutes each side for a medium rare burger. When you flip them, add the cheddar cheese and cover with a lid so the cheese melts.
  7. Remove the burgers from the pan or grill and let them rest while you toast the buns with a little butter on the skillet. This should only take about 1 minute.
  8. Assemble your burger by adding special sauce to one side of the bun, then the patty, caramelized onions and butter lettuce.
