5 Minute Spinach & Pomegranate Salad

Ingredients

  • 2 cups baby spinach
  • 2 cups arugula
  • 1/2 cup candied pecans
  • 1/3 cup goat cheese
  • 1/3 cup pomegranate seeds
  • 1/4 cup olive oil
  • 3 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1 tsp Dijon mustard
  • Pinch of salt and pepper

Instructions

  1. Whisk together olive oil, apple cider vinegar, maple syrup, mustard, salt and pepper. You might have a little extra dressing, but better than not enough ๐Ÿ˜‰
  2. Add remaining ingredients to a large bowl and toss with the dressing, adding about 1 tbsp at a time until itโ€™s fully dressed.
