Pumpkin Spice Cake with Cream Cheese Frosting

Ingredients

Pumpkin Spice Cake

  • 2 eggs
  • 1 cup coconut sugar
  • 1 cup pumpkin purée
  • 1/2 cup melted coconut oil
  • 2 tsp. pumpkin pie spice
  • 1 tsp. vanilla extract
  • 1 cup gluten free all purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda

Cream Cheese Frosting

  • 6 oz @kitehillfoods almond cream cheese softened to room temp you can use regular too
  • 1/4 cup @fourthandheart ghee butter works too
  • 1 1/2 cup powdered sugar
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

Pumpkin Spice Cake

  1. Preheat oven to 350°F. In a mixing bowl combine the eggs, coconut sugar, coconut oil, pumpkin purée, pumpkin pie spice, and vanilla. Whisk together. Add in the flour, baking powder, baking soda, and salt. P

  2. Pour into a parchment paper lined 8x8 baking pan and bake for 35-40 minutes. Let cool and frost then top with more pumpkin pie slice!

  1. Combine all ingredients.
