GF SUGAR COOKIES WITH CHAI SPICED FROSTING

Ingredients

DRY

  • 1 ½ cups gluten-free all purpose flour
  • ¼ tsp salt
  • 1 ½ tsp baking powder
  • 2 scoops @furtherfood vanilla collagen (optional)

WET

  • ½ cup sugar
  • ½ cup butter room temperature
  • 1 egg room temperature
  • 1 tsp vanilla

Chai Spiced Frosting

  • 6 oz @kitehillfoods almond cream cheese softened to room temp (you can use regular too)
  • ¼ cup @fourthandheart ghee (butter works too)
  • 1 ½ cup powdered sugar
  • ½ tsp vanilla extract
  • ½ tsp salt
  • ½ tsp cinnamon
  • ¼ tsp ginger, nutmeg and cardamom

Instructions

Cookies

  1. Line a baking sheet with parchment paper and preheat oven to 375 degrees.

  2. In a medium sized bowl, whisk dry ingredients together and set aside.

  3. In a stand-up mixer using the paddle attachment (you can also use hand held electric mixer), beat sugar and butter on medium speed for 2 minutes or until white and fluffy. Add in egg and vanilla and mix for another 2-3 minutes until everything is combined.

  4. Add in flour and mix together on low speed until dry ingredients are fully incorporated into wet. Using a cookie scooper (equal to 1-2 tablespoons) scoop out dough and then roll in your hands to form a ball. Place on baking sheet and using your hands lightly press down to flatten out cookie a little bit.

  5. Bake in oven for 8-10 minutes or the bottoms are golden. Let cool on baking sheet for 5 minutes before transferring to cooling rack to cool completely.

Chai Spiced Frosting

  1. Combine all ingredients well with a mixer.
