  1. The key is to cut your sweet potato as thin as possible!! Bake at 425 degrees for about 10 minutes each side (depending on thickness) and then broil for a minute or two before taking it out. I spray them with a little olive oil before too! Top with @kitehillfoods almond milk cream cheese (splurge item but worth it), avo, @traderjoes everything but the bagel seasoning and a side of scrambled eggs. So satisfying!! Got extras?? Pop the leftover sweet potato toasts in the toaster or broil for a couple minutes in the oven for a quick breakfast the next day!!
