1. Coconut rice is 1 1/2 cups jasmine rice, 1 can full fat coconut milk, 1 empty can of coconut milk filled with water, and a dash of salt. Mix together, bring to a boil, then let simmer until water is absorbed (30ish minutes). Shrimp (1 pound) is cooked in a little sesame oil on medium high heat then once its cooked add in the sauce: 3 tbsp soy sauce, 1 tbsp honey, 2 tsp sriracha and 3 minced garlic cloves. Serve on top of rice with broccoli and roasted sesame seeds.
