Veggie Zoodle Soup


  1. Sauté 1/2 diced white onion, 4 cloves diced garlic and some green onion in a tablespoon of oil on medium heat

  2. Add in your favorite veggies! I did carrots, celery, broccoli, cherry tomatoes and sweet potatoes.

  3. Season with salt, pepper, garlic powder, cumin, chili powder, turmeric and whatever else you want!

  4. Add in about 8 cups of veggie broth and bring to a boil

  5. Once boiling, top with thyme, rosemary, sage, basil and bay leaves

  6. Cover and simmer for 30 minutes or until sweet potatoes are soft 

  7. Remove herbs and add in zoodles and kale (I wait until after it’s cooked so they don’t get soggy)

  8. Add in some chili flakes, hot sauce or something to spice it up
