Raspberry Oat Crumble Bars

Servings 10 people


  • 1 1/2 cups flour (regular, almond, whole wheat, etc.)
  • 3/4 cup quick cook rolled oats
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 lemon
  • 1/3 cup coconut sugar (regular works too)
  • 6 oz light cream cheese softened
  • 1/4 cup butter softened
  • 3/4 cup seedless raspberry jam


  1. Preheat oven to 350 degrees and line a 9 x 9 pan with foil. Lightly spray with coconut oil.

  2. Combine flour, baking soda, salt, oats, coconut sugar and and the zest from your lemon.

  3. In a mixer or food processor, combine the cream cheese and butter. Add in flour and oat mixture until its nice and crumbly. 

  4. Add all of the crumble mixture except for one cup - set aside. Press the mixture into the baking pan evenly and bake for 20 minutes.

  5. In a separate bowl, combine the jam and juice from the lemon. Spread over the crust once it's done baking and while it is warm. Add remaining cup of the crumble mixture on top.

  6. Bake for 10-15 minutes. Let cool before cutting into bars.
