I wasn’t kidding when I said sheet pan salmon was my go to meal. It’s just too easy and literally the healthiest quick dinner that is so jam packed with flavor! Super great for meal prep and having the leftovers for lunch – salmon is good for 3 days in the fridge after you cook it. Do yourself a solid and save this Garlic Dill Sheet Pan Salmon for the next time you want a super nutritious meal in under 20 minutes!
Ingredients
- 2 salmon filets
- 3 cloves garlic, crushed
- 3 tablespoons fresh dill
- 1/2 lemon
- 1 lb baby potatoes
- Veggies of your choice
- Avocado oil spray
- Salt & pepper
Instructions
- Start by heating your oven to 400 degrees. Then heat up your baby potatoes in the microwave for about 5-6 minutes until slightly tender. Place on the sheet pan with veggies of your choice (I did green beans and added garlic) and coat with avocado oil spray, salt and pepper.
- Top your salmon with lemon juice, garlic, fresh dill, salt and pepper then spray with avocado oil. Bake for 13-15 minutes until potatoes are tender and the salmon is easily “flaked” off with a fork.
