Ingredients
- 1 1/2 lb chicken breasts
- 1/2 cup mayonnaise
- 1 chipotle pepper in adobo sauce
- Juice from 1 lime
- Tacos:
- Tortillas
- Shredded lettuce
- Red onion
- Tomato
- Grated cheddar cheese
Instructions
- Using an immersion or regular blender, blend together mayonnaise, chipotle pepper, and lime juice until smooth.
- Add the chicken to a Tupperware and pour the mayonnaise mixture on top. Close the lid and shake to coat the chicken. Refrigerate for at least an hour, up to over night.
- When you’re ready to cook the chicken, heat the grill over medium high heat. Cook for about 3-4 minutes each side or until cooked through, depending on the thickness of your chicken breast. Let it rest for 5 minutes before cutting into bite sized pieces.
- Assemble your tacos to your liking and enjoy!
