One of my favorite healthy dinners that is perfect for meal prep! These Sloppy Joe Stuffed Sweet Potatoes hit the spot every single time and they are so easy to whip up. You can take the “sloppy joe” base and go so many different directions with it too.
This is my personal favorite way to serve it, but I have also had it in a rice bowl with some avocado and spinach or even as a traditional Sloppy Joe sandwich.
For the toppings, I love doing either Greek yogurt or sour cream, my homemade ranch, cheddar cheese and lots of green onion. You can also easily adapt the recipe to be made Whole30!
This was so easy to make and my entire family including my 2 year old loved it! I’m pregnant now and cannot stomach eating certain things but I took a second helping of this meat! Brocc always kills it!
