Sticky Apricot BBQ Turkey Meatballs
Ingredients
- 1 lb ground turkey
- 1/3 cup Panko breadcrumbs or almond flour
- 1 egg
- 2 cloves garlic minced
- 1 tsp kosher salt
- 1/2 tsp pepper
- 1/2 cup apricot jam
- 1 cup BBQ sauce
- Chives to garnish
- Cheddar cheese optional
Instructions
- Preheat oven to 350 degrees.
- Combine turkey, breadcrumbs, egg, garlic, salt and pepper. Roll into small balls, with the option to add a small chunk of cheese to the center if you’re feeling wild.
- Add them to a parchment lined or nonstick sheet pan, being careful not to overcrowd the pan. Bake for 15 minutes.
- While they bake, make your sauce. Combine the BBQ sauce and jam on a skillet over medium heat. Let it simmer while the meatballs cook.
- Once they’re done, add them to the sauce and toss to coat. Serve with chives as garnish and toothpicks for easy snacking!
