Trying to implement more plant based meals into my diet and this Vegan Curry is the PERFECT way to do it. My girl, Lindsey Harrod and I seriously DEVOURED this, plus it no joke was one of the easiest recipes I’ve ever made. It makes about 4-6 servings so it’s perfect for meal prepping too. For sure going into my rotation!
Ingredients
- 1 can garbanzo beans drained and rinsed
- 1 bell pepper sliced
- 1 cup carrots
- 1 cup broccoli
- 1 12 oz jar of curry sauce
- 1 tsp Trader Joe’s vegan chicken-less seasoning
- Salt and pepper
- Cilantro
- Rice of choice
Instructions
- Heat a large skillet over medium heat. Season veggies with salt & pepper and season the garbanzo beans with the chicken-less seasoning.
- Add veggies to the pan with 1/3 cup water and cover to steam. After about 5 minutes when veggies are cooked to your liking, add in garbanzo beans and curry sauce.
- Combine and bring to a simmer. Serve over rice with cilantro on top!
