Do you ever just crave ranch dressing and decide what you’re going to eat based off that? Yeah, that happened with this recipe and then the most beautiful creation came from it – ZUCCHINI CAULIFLOWER FRITTERS! This photo wasn’t exactly insta worthy in my opinion but you deserve to know this recipe no matter how non-photogenic fritters are amazing!
Ingredients
- 2 medium-sized zucchinis
- 1/2 cup cauliflower rice
- 2 eggs
- 3/4 cup almond flour
- 3 tbsp grated Parmesan cheese
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- Avocado oil
- Ranch dressing to dip!
Instructions
- Grate your zucchinis and squeeze out excess water. You can use a nut milk bag OR place in a bowl and squeeze the excess water out with a paper towel until the zucchini is dry.
- Put the dry grated zucchini in a large bowl and add eggs, cauliflower rice, almond flour, Parmesan cheese, baking powder, salt & pepper and garlic powder. Mix em’ all together!
- Make little patties and cook on medium to high heat with some avocado oil for 4-5 minutes each side or until crispy.
- Serve with ranch dressing!
