If you’ve never drunk ordered a Crunchwrap Supreme from Taco Bell I’m not sure we will have anything in common… But seriously, why wait until 1 am when you have to direct your Uber driver 10 minutes in the opposite direction to get this envelope of heaven? Make these HEALTHY CRUNCHWRAP SUPREMES for any day of the week and even enjoy while SOBER! Yep. Changing the world here folks!!
Healthified Crunchwrap Supreme
- 1 lb ground turkey or beef
- 1/2 white onion diced
- 2 tbsp avocado oil
- salt, pepper, paprika, chili powder, oregano, cumin, cayenne or taco seasoning
- 8 large flour tortillas burrito size
- 8 tostadas or 1 bag of tortilla chips
- pepper jack cheese
- Greek yogurt or sour cream
- 2 ripe avocados
- shredded lettuce
- 2 tomatoes diced
Sauté 1/2 a white onion 1 tbsp avocado oil for about 5 minutes on medium heat. Add in about 1 lb of ground turkey or beef and let it brown on the pan. Season with salt, pepper, chili powder, paprika, oregano, cumin, and a dash of cayenne (or taco seasoning). Use a wooden spatula to break up the turkey into small pieces. It should be finished in about 5-7 minutes.
Place the meat on a large flour tortilla (burrito size) and top with melted pepper jack cheese, salsa and Greek yogurt (or sour cream).
Place a tostada on top of your “crunch layer” (I cooked a Siete Foods almond flour tortilla in some avocado oil on a skillet until it got crunchy on both sides - you could also use tortilla chips!).
Add mashed avocado, shredded lettuce, and tomatoes on your tostada or crunch layer.
Then add a smaller tortilla the same size of the tostada on top (you can cut it from the larger tortilla and use the excess for “C” shaped quesadillas later!). Gently fold in the sides until it’s all in sealed in.
Add your crunchwrap to an oiled, hot pan on medium heat. Cook for 1-2 minutes until each side until browned and crispy.
