Anytime I am vacationing in a rental home for an extended period of time, I typically don’t want to rely on dining out or getting takeout the whole trip so I put together recipes I made on a recent vacation and some extra that I considered adding to the rotation. I love to cook on a longer vacation, something about it just feels fun and exciting!

Grilled BBQ Chicken: When traveling, I cheat this chicken recipe pretty hard and use Southwest Blend to replace all the seasonings and mustard (because I’m not about to buy a big jar of mustard for just a couple teaspoons) and it still turns out amazing. (I marinated a couple extra chicken breasts in some lemon juice, Harmony Mediterranean Blend and olive oil. So simple and delish!)

Lemon Basil Pasta Salad: Such a light, refreshing recipe. I recommend making enough for leftovers the next day which goes perfect with any extra chicken or protein you make.

Sun-Dried Tomato & Feta Turkey Burgers with Jalapeno Tzatziki: These turkey burgers from my cookbook are so insane and they are the perfect dinner turned into leftovers for lunch. I served them with some microwave rice packs from Trader Joe’s as a side. You can make extra tzatziki for snack on throughout the week with some veggies and pita chips. I swapped all of the seasonings and herbs for Harmony Mediterranean Blend.Â

Mom’s Pink Pasta: Easily makes a huge batch if you need to feed a big, hungry crowd. Plus it’s minimal ingredients!

Deli-Style Turkey Sub with Sweet Pepper Relish: Everyone loves a good sandwich by the beach or pool. Make the sweet pepper relish beforehand and bring it along with you. The perfect summer lunch!

Cheesesteak Skillet: A minimal ingredient dinner where everyone can serve themselves!
