
I really outdid myself with this Creamy Broccoli Spaghetti with Toasted Breadcrumbs 𤤠Not only one of the best pasta dishes Iāve ever made, but honestly top 5 that Iāve ever had. Itās SO GOOD!!! And it takes less than 30 minutes to make. You must try it!

Creamy Broccoli Spaghetti with Toasted Breadcrumbs
Servings 6
Ingredients
- 16 oz spaghetti or pasta of choice
- 12 oz broccoli florets
- 2 tbsp olive oil
- 1 cup panko bread crumbs
- 1/3 cup pine nuts
- 1/2 cup whole milk ricotta
- 1/2 cup greek yogurt
- 1 lemon juice & zest
- 3 tbsp parmesan cheese
- Kosher salt & pepper
Instructions

Heat 1 tbsp olive oil in a skillet over medium heat. Add the breadcrumbs and season with salt and pepper. SautƩ until golden brown and set aside. Add 1 tbsp olive oil then the pine nuts to the same skillet. SautƩ until the nuts are golden and toasted. Set aside.

In a small mixing bowl, combine ricotta, greek yogurt, parmesan cheese, lemon zest, lemon juice, salt and pepper. Set aside while you make the pasta.

Cook your pasta according to the package and add broccoli for the last 3-4 minutes. Reserve 1 1/2 cups pasta water then drain.

Add the pasta and broccoli back to the pot and combine with the cheese, pine nuts and about 3/4 cups pasta water. Slowly add more until the sauce is creamy. Season to taste.

Serve with the toasted breadcrumbs, parmesan cheese and chili flakes on top!
