The most simple and delicious holiday side! I love delicata squash because it’s flavorful and has amazing texture, plus it’s easy to cut and you can leave the skin on! It’s hard to do serving sizes for sides because I don’t know if this is going to be one of 15 dishes on your Thanksgiving table or if it is accounting for half of your dinner. When I made this for just Corey and I as a little app, we polished it off easily but we were hungry! So I would say this recipe serves 2-4, but you may want to double it if it’s one of only a couple sides!
Parmesan Delicata Squash with Hot Honey

Parmesan Delicata Squash with Hot Honey
SERVES: 2-4 as a side
TIME: 30 minutes
Ingredients
- 1 large delicata squash, seeds removed and cut into 1/2 inch half moons
- 1 tablespoon olive oil
- 1 teaspoon Harmony Blends All Purpose Blend, optional
- 1/2 teaspoon kosher salt
- 1/4 teaspoon pepper
- 2 tablespoons grated parmesan cheese
- 2 tablespoons toasted walnuts, roughly chopped (you can also use pine nuts or hazelnuts)
- 1 tablespoon hot honey or honey and 1/4 teaspoon chili flakes, plus more to taste
- Freshly grated Parmesan cheese + fresh parsley to finish
Instructions
- Preheat the oven to 425 degrees. If you’re not using a nonstick baking sheet, line with parchment paper to prevent sticking.
- Toss the delicate squash in the olive oil, seasonings and parmesan until evenly coated.
- Lay evenly on the baking sheet and bake for 15 minutes, flip, then another 10 minutes or until the squash is tender when pierced with a fork.
- Stack the squash on a plate and top with hot honey, walnuts, freshly grated parmesan cheese and fresh parsley.
