A lot of people ask me where I get the inspiration for my recipes and I would say about half of them are me throwing together a meal from what’s in my fridge/pantry! That’s definitely how this Chicken & Couscous Soup for 2 was born. The perfect healthy dinner that is cozy and hearty too! Makes the perfect amount for 2, but feel free to double for leftovers!
Ingredients
- 1 boneless skinless chicken breast, cut into bite size pieces
- Salt & pepper
- Olive oil
- 1/2 yellow onion, diced
- 2 cloves garlic, minced
- 2 celery stalks, diced
- 2 carrots, diced
- 1 zucchini, diced
- 1 tbsp fresh thyme leaves
- 1 tbsp fresh oregano leaves
- 1/2 cup Pearl couscous
- 4 cups chicken broth
- Juice from 1 lemon
- Freshly shaved parmesan cheese to top
Instructions
- Season the chicken pieces with salt and pepper. Heat 1-2 tbsp olive oil in a dutch oven or large soup pot with a lid over medium heat. Add the chicken, stirring every couple minutes until cooked through (5-6 minutes). Remove and set aside.
- Add another tbsp of olive oil to the pot then add the onions, carrots, celery and garlic. Stir for about 3-4 minutes then add the zucchini. Stir for an additional 2 minutes or until vegetables are soft. Add thyme, oregano, salt, and pepper. Stir to combine.
- Add the broth and bring to a boil. Add the couscous, cover and simmer on low for about 15 minutes or until couscous is cooked. Add the chicken back in to warm through and add in the juice from a lemon.
- Season to taste and serve with fresh parm!
