Crispy Baked Tacos with Buffalo Ranch
Ingredients
Taco Meat:
- 1 pound ground beef, turkey or chicken
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp kosher salt
- 1/2 tsp pepper
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper
- Optional: 1/3 cup water, 1 tsp tapioca flour or cornstarch
- 1 lb taco meat
- 8 corn tortillas
- Shredded cheese
- Shredded lettuce
- Avocado
- Limes
- 1/2 cup Greek yogurt or sour cream
- 1/3 cup mayo
- 1/3 cup buffalo sauce
- 1 tsp kosher salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp dried dill
- 1/2 tsp dried parsley
- 1/4 tsp pepper
Instructions
- First, make the ranch by whisking together all ingredients. Refrigerate while making the rest.
- Preheat the oven to 425.
- Heat a skillet over medium heat. Once it’s hot, add in your ground beef. Break it up with a wooden spoon as it browns.
- Once the meat is almost fully browned, add in seasonings. If you like more “saucy” beef, add in the slurry of flour + water and let it simmer on medium heat until the liquid dissolved (6-8 minutes).
- Lay the tortillas out on a baking sheet and coat both sides with avocado oil. Add the taco meat to one half of the tortillas and top with cheese. Bake for 5 min then remove from the oven and fold the tortillas to make a taco. Bake for an additional 5-7 minutes or until crispy.
- Add your desired toppings and serve!
