6 corn or @sietefoods cassava or almond flour tortillas
1 15 oz jar of salsa verde or @sietefoods green enchilada sauce honestly any salsa works here!
Avocado oil spray
Salt
Toppings (all are optional):
3-4 eggs
Black beans
Shredded Mexican cheese or cotija cheese
Greek yogurt
Pico de Gallo
Avocado
Cilantro
Chopped red onion
Jalapeños
Hot sauce
Instructions
Preheat oven to 400 degrees and line 2 large baking sheets with parchment paper. Spray with avocado oil.
Stack tortillas over one another and then cut them into 6 wedges. Place evenly without overlapping on the baking sheet and spray with avocado oil and a little bit of salt.
Bake for 10-15 minutes until tortillas are light brown and crispy.
While the tortillas bake, heat the salsa/sauce over medium heat in a large skillet.
Once tortillas are done, add them in and gently turn the tortillas until coated evenly. Let it simmer for 5 minutes.
Add your cheese and eggs and cover until eggs are cooked to your liking.
Remove from heat and add the rest of your toppings.
