The dinner party salad of my dreams! This Citrus Avocado Salad is not only as delicious as it is beautiful, it’s very simple to throw together and can be prepped ahead of time. It was low key born out of a fridge clean out and what I had on hand (pistachios, citrus and feta cheese are always in stock). Turned out to be a hit and everyone’s favorite part of dinner! I served it with grilled turkey burgers and roasted potatoes for an ideal backyard BBQ. Enjoy!
Ingredients
- 4 cups spring mix
- 2 tbsp fresh mint chopped
- 1 medium sized grapefruit peeled and sectioned
- 1 orange peeled and sliced
- 1 avocado sliced
- 1 radish thinly sliced
- 2 oz feta cheese
- 3 tbsp pistachios
- Kosher salt & pepper
Citrus Shallot Vinaigrette:
- 1/4 cup olive oil
- 1 tbsp red wine vinegar
- Juice from 1/2 small lemon
- Juice from 1/2 small orange
- 1/2 shallot minced (about 1 tbsp)
- 1/2 tsp Dijon mustard
- Pinch of salt & pepper
Instructions
- For the dressing, whisk together all ingredients until combined.
- Season to taste.
- Assemble the salad and season with salt and pepper.
- Lightly dress when ready to serve.
