This quick and easy recipe is packed with protein and fiber and is amazing for meal prep! There is minimal chopping and prep to be done for you to have for lunches for your busy week. It’s fresh and filling with the best tastes and textures, you’re going to love it!

First make the sauce by whisking together all ingredients until smooth.

Cook the pasta according to instructions. Rinse with cool water after straining.

In a large bowl, toss the cooked noodles, sauce, chicken, 2/3 of the green onions and sesame seeds until combined.

Top with remaining green onion, cucumber, carrot, sesame seeds and cilantro then dig in!

So good! Added air fryer chicken thighs and doubled the sauce. Quick, easy and tasty…definitely a keeper!

it’s SO good and perfect for the hot weather! I’ve made it at least once a week because it’s such an awesome dish to keep in the fridge for lunches. Cannot recommend enough!
My husband and I LOVED how this came out! Just took a little long to prep bc I julienned baby carrots and a cucumber and also boiled and shredded my own chicken. Next time will try with rotisserie!!
