This is one of my all time favorite salads. I get it every time I go to @erewhonmarket even though it’s like $14 for a tiny container. But yay now we can make it at home!
6 cups kale de-stemmed and chopped into small pieces
1 15 oz can of white beans drained and rinsed
1 large avocado cut into cubes
1/3 cup sunflower seeds or pepitas they use both but seems v unnecessary
1/4 cup hemp seeds
Sea salt & black pepper
Dressing:
1 lemon juiced
1 tbsp maple syrup
1 tbsp Dijon mustard
1/4 cup extra virgin olive oil
Pinch of salt
Instructions
Prep your kale and place into a large bowl. Make your dressing by whisking together all ingredients and toss into the kale. Add remaining ingredients and serve!
