This is one of my all-time favorite salads. I get it every time I go to Erewhon even though it’s like $14 for a tiny container. I set out to perfect a remake and now we can make it at home! It’s loaded with so much goodness — kale for fiber and vitamins, white beans for plant-based protein, creamy avocado for healthy fats, and tons of seeds packed with protein and minerals to keep you energized and full. Plus the lemony maple dressing ties it all together and makes it taste so fresh and vibrant. Feel free to add my Balsamic Grilled Chicken or protein of choice for even more nutrients!
It also holds up really well in the fridge, which makes it perfect for meal prep. I typically make a big batch in my mixing bowls that have lids (linked on my Amazon storefront!) so I have healthy, delicious lunches ready to go all week long.
Dressing:
Make your dressing by whisking together all ingredients. I like to do this at the bottom of the serving bowl I’m using to save on dishes!
Add the kale, white beans, avocado, sunflower seeds, and hemp seeds to the bowl. Toss, season to taste, and serve. Pairs great with my Balsamic Grilled Chicken
