Cowboy Caviar is trending and this is definitely a trend I can get behind. Since you know I looove a good salad, I decided to give y’all my take on the viral recipe with this Cowboy Caviar Chopped Salad. Hope you enjoy it as much as I did & thank you to @brialem for bringing it back!!
Ingredients
- 2 cups romaine lettuce
- 2 cups kale stems removed
- 1 red bell pepper
- 1 orange bell pepper
- 1 ripe avocado
- 1 1/2 cup corn
- 1/2 red onion
- 1 jalapeño
- 1 15 oz can black beans drained and rinsed
- 1 15 oz can black eyed peas drained and rinsed
- 3/4 cup feta cheese
- 1/4 cup cilantro
- 3 green onions
- Tortilla chips to serve
Dressing:
- 1/2 cup olive oil
- 1/4 cup white wine vinegar
- 2 limes
- 2 tbsp taco seasoning
- 2 tbsp hot honey
- Salt & pepper
Instructions
- Chop all of your vegetables, lettuce and herbs and add to a bowl with the beans, corn and feta.
- Add dressing and toss to coat.
- If you want to add chicken, I made about 50% more dressing to marinate 1 lb of chicken breasts.
- Refrigerate the chicken for 1-4 hours before grilling.
- Serve with tortilla chips.
