This Greek Pasta Salad is hands down my favorite salad recipe (ok fine tied with my Skinny Caesar). It’s so easy to throw together and extra filling with the added pasta. Try it with my Chicken Shawarma Chicken Thighs! YUM!
Ingredients
- 2 cups arugula
- 2 cups romaine lettuce
- 2 cups brown rice fussili pasta from Trader Joe's
- 2 tomatoes
- 1 cucumber
- 1 avocado
- 1/2 cup feta cheese
- fresh basil, parsley and/or mint.
Dressing
- 1/4 cup olive oil
- 3 tbsp red wine vinegar
- 1 lemon juice
- lemon pepper
Instructions
- Combine all ingredients and toss with dressing.
