There is nothing like a vacation-inspired Restaurant Remake and this one really tastes like you’re in paradise. After a single sip of the passion fruit margarita at Escondido Bar in Sayulita, I knew I had to recreate it and put it in the summer weekend cocktail rotation. It’s beautiful, delicious and refreshing!
I made a super easy passion fruit puree by blending some Pitaya Foods frozen passion fruit pieces (you can find it at Whole Foods or Sprouts), but you also can buy passion fruit puree online or at certain grocery stores. It would also be delicious if you swapped the passion fruit for mango! If you’re looking to make this spicy, muddle a couple jalapeño slices in the bottom of the cocktail shaker before adding the rest of the ingredients. Enjoy this one!
First make the puree by blending the passion fruit until smooth.
Next, add enough ice to fill a cocktail shaker about halfway. Pour the tequila, passion fruit puree, lime juice, and agave over the ice and shake vigorously for 30 seconds.
Using a lime, rim the glasses with tajin if desired. Add ice to the glasses then pour the mixture evenly into the two glasses. Cheers!
