The best pasta I’ve had in a LONG time. I threw this together the other night and got so many requests for the recipes I had to recreate it for you guys!
1 12 oz package of chicken sausage cut into slices (I used Eat See More kale pesto chicken sausage)
2 medium sized zucchini, chopped
1/4 cup sun-dried tomatoes
2 tablespoons butter
2 tablespoons fresh basil
1/4 cup at least grated parmesan cheese
2-3 tablespoons olive oil
Black pepper
Balsamic glaze
Instructions
Cook your pasta of choice according to the package instructions.
While the pasta cooks, heat a large skillet over medium heat. Add a generous drizzle of olive oil and then add the zucchini. Season with salt and pepper.
Let the zucchini sit in the pan without touching it for 2-3 minutes. Mix, then let it sit for another 2 minutes before adding in the sausage. Once everything is crispy, in about 5 minutes, turn the heat off.
Once you’ve cooked and drained your pasta, mix in the butter, a drizzle of olive oil, 1-2 tablespoons parmesan cheese and sun-dried tomatoes.
Add the pasta to the skillet with the zucchini and sausage and stir to combine. Serve with fresh basil, more cheese and balsamic glaze to top.

This was phenomenal and ridiculously easy to make. I cooked a whole pound of pasta and added it by the spoonful until I thought a good amount was in the sausage zucchini skillet. Refrigerated the rest. I used Beyond plant based italian sausage and follow your heart parmesan. I did not add the additional butter/oil to save a few calories! Will be making this recipe again and again! Thank you!

This recipe is not only simple but also incredibly delicious. I can definitely see it becoming a staple in my meal rotation!
Great recipe. I subbed risotto in place of the pasta and sauteed 2 cloves of garlic in the oil before adding the zucchini.
This recipe was so surprisingly flavorful with such simple ingredients! I will definitely make it again!
