Coconut lime chicken is competing for my #1 chicken recipe. Made this up on my first live last night and it turned out amazing!!! Served it with some cauli rice seasoned with lime and cilantro and some roasted broccoli.
Coconut Lime Chicken
- 1 chicken breast
- 1-2 tbsp coconut oil
- 1 can coconut milk
- 1 shallot minced
- 1 clove garlic minced
- 2 limes
- 2 tbsp cilantro
- 1 tsp salt, pepper, & turmeric
Cut the chicken breast in half longways and sear in coconut oil on medium high heat for about 5 minutes each side. Remove chicken from the pan and reduce heat to medium.
Add in the shallot, garlic, and a little more coconut oil. Sauté until fragrant/soft.
Add in the cream (top part) of the canned coconut milk, juice from the limes, cilantro, and salt, pepper, & turmeric.
Add chicken back in and simmer until chicken is cooked through.
Top with red chili flakes and serve with rice and sauteed veggies.
Serve with cauliflower rice for Whole30.
