Pumpkin Spice Cake with Cream Cheese Frosting
Ingredients
Pumpkin Spice Cake
- 2 eggs
- 1 cup coconut sugar
- 1 cup pumpkin purée
- 1/2 cup melted coconut oil
- 2 tsp. pumpkin pie spice
- 1 tsp. vanilla extract
- 1 cup gluten free all purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
Cream Cheese Frosting
- 6 oz @kitehillfoods almond cream cheese softened to room temp you can use regular too
- 1/4 cup @fourthandheart ghee butter works too
- 1 1/2 cup powdered sugar
- 1/2 tsp. vanilla extract
- 1/2 tsp. salt
Instructions
Pumpkin Spice Cake

Preheat oven to 350°F. In a mixing bowl combine the eggs, coconut sugar, coconut oil, pumpkin purée, pumpkin pie spice, and vanilla. Whisk together. Add in the flour, baking powder, baking soda, and salt. P

Pour into a parchment paper lined 8×8 baking pan and bake for 35-40 minutes. Let cool and frost then top with more pumpkin pie slice!
