
Truly obsessed with Starbucks breakfast. I prefer a Spinach Feta Wrap or their Bacon Gouda Breakfast Sandwich to most brunch spots in LA. If only their coffee didn’t suck so bad LOL. Like I don’t even understand how they manage to make their coffee taste that bad?? Maybe I’ve got it backwards but these are just my opinions.
Any who, I love making these wraps at home because they are the perfect, super filling breakfast! Starbucks uses egg whites, but you won’t catch me EVER throwing out a perfectly good egg yolk (that also happens to be packed with tons of healthy nutrients unlike the egg white). They also use a whole wheat wrap but I wanted to make it gluten free so I used Siete almond flour tortillas.
Feel free to make it your own, but don’t forget the sriracha 😉

Copycat Starbucks Spinach Feta Wrap
Ingredients
- 1 tortilla I used Siete Almond Flour Tortillas
- 2 eggs
- 1 small handful of spinach
- 1 tbsp crumbled feta cheese
- 1 tbsp sun dried tomatoes chopped
- Kosher salt
- Black pepper
- Avocado oil
Instructions

In a small skillet, whisk your eggs over medium low heat. Add a pinch of salt and pepper and your spinach.

Continue to push the eggs to the center of the pan until cooked through. Mix in feta cheese.

Heat your tortilla for a few seconds on each side so it is easy to fold. Heat your small skillet over medium heat.

Add the eggs to the center of the tortilla and fold the bottom up. Bring the sides of the tortilla in and place fold side down on your hot pan with a drizzle of avocado oil.

Cook until each side is golden brown. I served with some tomatoes & avocado and of course some sriracha!
