
Can’t seem to keep enough of these Double Blueberry Oatmeal Muffins in the house! 🫐 Not only are they extremely delicious, they are actually SO filling! By adding a superfood oatmeal to the mix, each muffin has superfoods like oats, quinoa, amaranth, chia and flax which not only add great texture but are packed with health benefits. It’s also delicious on its own for breakfast!

Double Blueberry Oatmeal Muffins
Servings 12 muffins
Ingredients
- 1/2 cup oatmeal I used @purely_elizabeth original superfood oatmeal
- 1/2 cup water
- 1 1/2 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp kosher salt
- 1/2 cup butter or coconut oil melted
- 1/2 cup sugar
- 1/2 tsp vanilla extract
- 1 egg
- 2 cups blueberries
Crumble to top:
- 1/4 cup brown sugar
- 2 tbsp cold butter cut into small cubes
- 2 tbsp all purpose flour
- 2 tbsp oatmeal
Instructions

Preheat the oven to 400 degrees and line or grease a muffin tin.

Make the crumble by combining all ingredients in a small bowl with your hands. Set aside.

In a small bowl, combine the oats and water and let it sit for 5-10 minutes. In a mixing bowl, whisk together the butter or oil, sugar, vanilla and egg until completely combined. Stir in the oats.

In another bowl, combine the flour, baking powder, baking soda, and salt. Stir the dry mixture into the wet mixture until just combined, then fold in blueberries.

Add 2-3 tablespoons of batter to each muffin tin, keeping in mind they will rise a bit.

Top with the crumble and bake for 20-24 minutes or until the muffins start to turn golden brown and the center is cooked through.
