This easy beef fried rice is the meal I make after a long day of work and don’t feel like chopping or doing a bunch of dishes. This flavorful and super simple dinner is made with ingredients from Trader Joe’s, and is packed with veggies and 30 grams of protein per serving. Everything cooks in one pan for easy clean-up, and comes together in just 30 minutes. It’s great for meal prepping and freezing, too! I love finishing this dish with Trader Joe’s Crunchy Chili Onion for a little spice.

Heat 1 tablespoon toasted sesame oil in a large skillet or wok over medium heat. Add the garlic and ginger cubes and cook for about 1 minute. (If using the frozen cubes, cook until fully melted.) Add the beef in an even layer and turn the heat up to medium-high. Cook for about 4 minutes, stirring once halfway through, until the beef is no longer pink.

Add the frozen rice, frozen veggies, and water. Cover the pan to steam the veggies and rice for about 5 minutes until they’re warmed through.

Push the mixture to one side of the pan. Add 1 teaspoon toasted sesame oil, then crack in the eggs. Scramble them until they are cooked through, then stir them into the fried rice. Cook for another 5 minutes, stirring once halfway through, until the rice is crispy. Turn off the heat and stir in the soy sauce.

Serve in bowls and top with scallions, Crunchy Chili Onion, and more soy sauce if desired. Enjoy!

Trader Joe’s sells thinly shaved beef in the meat section. If you are not near a Trader Joe’s, you can place a piece of flank or skirt steak in the freezer for about an hour until it is firm but not frozen. With a sharp knife, slice as thinly as possible against the grain.
Made this tonight – super easy and straightforward! Doubled up on the eggs + used some leftover veggies we had in the fridge (carrots and broccoli). Will be adding into the weekly rotation!
This recipe is fantastic and so easy. I used the frozen corn/carrots/peas/green beans from Trader Joe’s and then used my own rice I cooked because I had it. It’s so so good. Tastes like real Asian food and the leftovers are better than normal Chinese takeout leftovers too! ⭐️⭐️⭐️⭐️⭐️
