Preheat oven to 400 degrees. Cook pasta according to package, but subtract 2 minutes from the cooking time (the pasta will cook slightly while it bakes so we don’t want to overcook it).
Heat a skillet over medium heat. Cut your chicken into bite size pieces and season with salt & pepper. Add a drizzle of oil to your skillet once it’s hot then add your chicken. Cook for about 2 minutes each side or until cooked through.
Combine cooked pasta, red sauce, 1/2 cup of mozzarella, and diced cooked chicken in a baking dish. Top with bread crumbsand remaining mozzarella and bake for 15-20 minutes until cheese is melted and golden brown. Serve with fresh basil and parmesan cheese!
