Coconut lime chicken is competing for my number one chicken recipe. Served it with some cauli rice seasoned with lime and cilantro and some roasted broccoli.
2 chicken breasts cut longways to make them thinner
1-2 tbsp coconut oil
1 can coconut milk just the hard top part
1 shallot minced
1 clove garlic minced
3 limes
2 tbsp cilantro
1 tsp salt
1 tsp pepper
1 tsp turmeric
1 tsp red chili flakes
Instructions
Cut the chicken breasts in half longways and sear in coconut oil on medium high heat for about 4-5 minutes each side. Remove chicken from the pan and reduce heat to medium.
Add in the shallot, garlic, and a little more coconut oil. Sauté until fragrant/soft.
Add in the cream (top part) of the canned coconut milk, juice from the limes, cilantro, and salt, pepper, turmeric, & red chili flakes.
Add chicken back in and simmer until chicken is cooked through.
Top with red chili flakes for added spice and serve with rice.
Notes
Serve with cauliflower rice for Whole30.
