This 20-minute high protein pasta recipe is perfect for those busy nights when you want something comforting and satisfying, but also really nourishing. It features Trader Joe’s mafalda corta pasta (basically mini lasagna noodles – so cute!) and rosatella pasta sauce, but feel free to use whatever short pasta and creamy tomato sauce you’d like. Oh, and did I mention that it’s PACKED with over 40 grams of protein per serving?! This will be one of your weeknight go-to’s.

Turkey Rosatella Pasta with Broccolini
Ingredients
For the broccolini:
- 1 tbsp. extra virgin olive oil
- 1 clove garlic, minced
- 1 package broccolini
- Kosher salt
- Freshly ground black pepper
- ½ cup water
- Juice from ½ lemon
- 10 oz. mafalda corta pasta
- 1 tbsp. extra virgin olive oil
- 2 cloves garlic, minced
- 1 lb. 93% lean ground turkey (or ground chicken)
- ½ tsp. kosher salt
- Freshly ground black pepper
- 1 jar rosatella pasta sauce (or your favorite jarred vodka sauce)
- Freshly grated parmesan cheese
- 2 burrata cheese balls, split in half (or 1 cup of ricotta cheese)
- Freshly ground black pepper
- Fresh basil leaves, thinly sliced
Instructions
- Bring a large pot of salted water to a boil, then add in the pasta and cook until al dente. Reserve 1 cup of the pasta water before draining the pasta.
- While the water boils, make the broccolini. In a large skillet, heat 1 tbsp. olive oil over medium-high heat. Saute the 1 clove of minced garlic for 1 minute, then add the broccolini and season with salt and pepper. Add water and cover the pan with a lid. Steam the broccolini until fork-tender, about 6-8 minutes. Squeeze lemon juice over top, then use tongs to transfer it to a plate. Cover with foil to keep warm while you cook the pasta and sauce.
- In the same skillet over medium-high heat, add 1 tbsp. olive oil. Saute the 2 cloves minced garlic for 1 minute, then add in the ground turkey and season with salt and freshly ground black pepper. Use a wooden spoon or meat masher to break up the meat and cook until the turkey is fully cooked, about 5 minutes.
- Stir in the jar of pasta sauce, then add in the cooked pasta and ½ cup of the reserved pasta water. Stir everything together until the pasta is fully coated. Taste and season with more salt and pepper if desired, plus more pasta water to thin the sauce if needed.
- Serve pasta in shallow bowls with parmesan cheese, half a ball of burrata , basil, and freshly ground black pepper on top, plus the broccolini on the side.
