Healthified Panda Express Orange Chicken
Ingredients
Crispy Chicken:
- 1 lb organic chicken breasts cut into strips
- 1 egg
- 1/2 cup almond flour
- 2 tbsp tapioca flour
- Avocado oil
- 2 oranges juiced
- 3 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp rice vinegar
- 2 tsp sriracha or sambal
- 1 tbsp honey monk fruit sugar, or regular sugar works too
- 1 tsp ginger grated
- 3 cloves garlic minced or crushed
- 2 tsp tapioca flour
- Rice & veggie of choice to serve
Instructions
- Heat a skillet over medium heat. Coat chicken strips in egg wash then a mixture of almond flour and tapioca flour.
- Add avocado oil to coat the hot pan then add chicken. Cook for 2-4 minutes each side (depends on the size and thickness of the chicken). While the chicken cooks, make the sauce.
- In a medium sized bowl, whisk together all ingredients for the Orange Sauce.
- Once the chicken is cooked and crispy on both sides, add the sauce and simmer for a few minutes. The consistency should be thick, but still runny. Serve over rice with veggies of choice! I did roasted broccoli and I also topped everything with sesame seeds.
