Who knew recreating my fav Taco Bell order would be so easy? Made this Mexican Pizza in under 15 minutes and it is giving me allllll the drive thru feels in the best way. You guys HAVE to try this one if you loved the Crunchwrap Supreme!
Ingredients
- 1 lb ground turkey or beef
- 1 tbsp avocado oil
- 1 packet taco seasoning
- Tortillas- I used Siete Foods almond flour tortillas
- 1 can of fat-free refried beans
- 1 can red enchilada sauce
- Mexican shredded cheese
- Roma tomato chopped
- Green onions chopped
- Greek yogurt or sour cream
Instructions
- Start by cooking your meat (can omit to make vegetarian)- cook about 1 lb of ground beef or turkey in 1 tbsp avocado oil over medium heat. Add in taco seasoning according to package. Break up well with a wooden spoon.
- While that cooks, heat a skillet over medium heat and spray with Chosen Foods avocado oil spray. Once itās hot, add your tortilla. You can really use any, but I recommend Siete Foods almond flour tortillas. Cook for about a minute on each side or until they get crispy (you will need 2 tortillas per Mexican pizza).
- Spread fat free refried black beans evenly over your crispy tortilla then top with your taco meat. Add another tortilla on top, spread evenly with red enchilada sauce (love the one from Trader Joeās), sprinkle some Mexican cheese over the sauce and add a small handful of chopped Roma tomatoes.
- Broil for about 2-3 minutes until cheese is melted and top with fresh green onion, Greek yogurt, and hot sauce.
