Chipotle who?! I meal prepped 4 burrito bowls for $20 and if I did the math correctly that’s like A LOT cheaper than buying at Chipotle. Eating healthy can be SO affordable, the key is to plan out your meals before heading to the store and don’t be afraid to eat the same thing a couple days in a row!
Ingredients
- 1 lb chicken breast cut into bite size pieces
- 1 16 oz bag of cauliflower rice
- 2 limes
- 2-3 tbsp cilantro
- 2-3 tbsp taco seasoning
- 1 tbsp avocado oil
- Avocado
- Greek yogurt
- Romaine lettuce
- Tomato
- Black beans
- Mexican cheese
- Hot sauce and/or salsa
Instructions
- Season both the chicken and cauliflower rice with the juice from one lime and 1 tbsp of taco seasoning. I make my own with chili powder, paprika, garlic powder, cumin, salt, pepper and a dash of cayenne. Sauté cauliflower rice for 6ish minutes on medium heat and add in some fresh cilantro. For the chicken, cook over medium heat for 4-5 minutes each side or until cooked through. Assemble in your bowl with avocado, shredded romaine lettuce, tomato, black beans, shredded Mexican cheese, Greek yogurt and @sietefoods jalapeño hot sauce. The topping options are endless!
- For the chicken, cook over medium heat in a drizzle of avocado oil for 4-5 minutes each side or until cooked through.
