The 30th episode of my 20 Minute High Protein Trader Joe’s Dinners series is a one-pan wonder (hello minimal dishes) that’s perfect for those busy weeknights when you want something hearty, healthy, and flavorful. It’s a balanced meal packed with protein, fiber and healthy fats that’ll leave you feeling satisfied and energized. Plus, it’s super customizable, feel free to swap in your favorite veggies, toppings or adjust the seasonings to your taste! Take it to the next level with the Harmony Mediterranean Blend.

Heat olive oil a large skillet with a lid over medium heat. Add the onion and garlic and cook, stirring occasionally, for 3-4 minutes. Add the ground turkey and break it up with a wooden spoon or meat masher until just cooked through. Add the zucchini and cook, stirring occasionally, for 3-4 minutes until the zucchini begins to soften.

Add the chickpeas, diced tomatoes, frozen rice, 1 teaspoon kosher salt, 1/2 teaspoon black pepper, and Mediterranean/Italian seasoning and stir to combine. Pour 1/4 cup water or chicken broth over the mixture then cover and let simmer on medium low heat for 10 minutes.

If there’s still too much liquid at the bottom after 10 minutes, uncover and turn the heat to medium high, stirring occasionally until the liquid has burned off. Season to taste with salt and pepper.

Top with feta cheese, pistachios, parsley and a squeeze of lemon. Store in the fridge up to 4 days.

This is by far one of my top 5 recipes! The savory flavor of the base was delicious and the addition of the toppings was a delight. I see myself making this recipe over and over again. Thank you so much. I want to make more of your recipes.

Easy and delicious! I added lemon zest and chopped mint from my garden, which really brightens the flavor.
Added a bunch of veggies that were going bad in my fridge – mushrooms, bell peppers, and spinach and it was delicious! Also added some extra dill on top!

Made this tonight and my husband said “best meal ever”! I only had a little bit of Italian seasoning left in my pantry, so I also added a bit of dried mint, dried oregano, and dried dill. Amazing!! Another Brocc win.
