Episode 19 in my series of 20 Minute High Protein Trader Joe’s Dinners was born from a fridge clean-out and it became an instant addition to my weekly rotation. This one is packed with veggies and is seriously such a quick and savory dinner with minimal dishes. Makes for amazing leftovers the next day too!
This recipe is packed with nutrients that will keep you energized and feeling full, but not stuffed. Olive oil, onion, garlic, zucchini, sun-dried tomatoes, spinach, and basil bring in essential vitamins, minerals, and antioxidants. Italian sausage, chicken broth and Parmesan cheese add protein and flavor while the orzo provides energy! As usual, this meal is one that will make you feel just as good after eating it as you feel while eating it. Enjoy!
So happy i found this recipe! I don’t like sundried tomatoes so I used San Marzano and put them in with the zucchini to cook them down. such a great flavor to this and great for meal prep 🙂
So so good! I used Ground turkey instead of sausage, and i added a few extra spices to gove it that sausage flavor. Will definitely be making again!

So simple and so good! I used a different pasta than orzo (just because I wanted to) and just omitted the stock and cooked the pasta on the side, and love it!
This is honestly one of my favorite recipes of all time! I wish i could eat it every day. It’s so easy (all in one pot), is protein and veggie packed, and the combination of flavors is absolutely incredible. I recommend this recipe to everyone!!! it is *Seriously So good* 🙂
