Created this Peaches & Greens Salad in collaboration with @eatalfalfa so if you’re near the Santa Monica or Hoboken you have the option to make it at home or go and pick one up. Either way, it’s a summer staple! I love adding grilled chicken as well. It doubles as a low carb lunch too!!

Peaches & Greens Salad
Ingredients
- 2 cups mixed greens
- 1 cup chopped kale stems removed
- 1 ripe peach chopped
- 1 ripe avocado sliced
- 3 tbsp fresh basil chopped
- 1/3 cup candied pecans
- 2 oz prosciutto chopped
- 1/2 cup fresh mozzarella cheese chopped in small cubes
Balsamic dressing:
- 1/3 cup olive oil
- 1/4 cup balsamic vinegar
- 2 tsp honey
- 1/2 tsp Dijon mustard
- Pinch of salt & pepper
Instructions
- Whisk together all ingredients for the dressing.
- In a large bowl, add all of the ingredients for the salad except the avocado.
- Toss with the dressing and top each salad with 1/2 an avocado, salt and pepper.
