We’ve been sleeping on peas you guys!!! I had a random craving for them and I had a couple bags in my freezer and now here we are. ANYWAY, these peas will change your world. They have bacon.
Defrost your peas in the microwave according to the package. Drain excess liquid.
In a large skillet over medium heat, add your chopped bacon. Cook, stirring occasionally, until the bacon is crispy. Remove from the pan and place on a plate covered in paper towels to soak up the grease.
Leave the bacon grease in the pan and add your shallots. Sauté for 3-4 minutes or until the shallot becomes translucent and fragrant.
Add in your defrosted peas, crispy bacon, apple cider vinegar and season to taste with red chili flakes, salt & pepper.
Top with Parmesan cheese and fresh parsley to serve!
