If you remember this recipe from back in 2017, then you know why it’s the first thing I made in my new crockpot. This Slow Cooker Salsa Verde Chicken was a weekly staple for me back when I was working 9-5 and running my food blog on the side.
It’s easy, flavorful, great for meal prep and requires almost no effort! Plus it’s nearly impossible to mess up which I learned first hand when I used a jar of hatch chilies thinking it was salsa verde lol. It actually still turned out incredible and in my defense the jar looked just like salsa!! We made taco bowls but this chicken is incredible in tacos, enchiladas, you name it!
Let’s See It!
Add the chicken, salsa, chiles and seasonings to your slow cooker. Cover and turn the heat to low.
Cook for 7-8 hours then shred with 2 forks.
Serve in tacos or over rice and beans with your choice of toppings. Enjoy!
Made this for dinner last night… delicious and easy!!! i dont have a slow cooker so i just cooked the chicken seasoned, shredded it, and then let that marinade in the salsa verde and green chilies for a bit. still flavorful! will Definitely be Making this dish again!!
